Big flat mushrooms make ideal bases to many recipes. This time we are stuffing them with spinach and chicken. I’m a massive garlic fan so I tend to double the quantity of garlic in most recipes, and this is one of them

Preheat oven to 200°C and line a baking tray with baking paper and lightly spray with olive oil
Chop stems off mushrooms and keep. Melt butter in saucepan, add garlic, herbs, chicken and mushroom stems and cook until golden.
Mix in spinach and cook for 1 minute. Stir in lemon juice and remove from heat.
Fill mushroom caps with mixture ad sprinkle with cheese. Place in oven for 10-15 minutes or until cheese has melted.
