Spiced Potato and Parsnip Soup

  1. Heat the oil in a large heavy based saucepan over a medium heat. Add the parsnip and potato and cook, stirring regularly, for 3-5 minutes or until lightly golden. Add the stock and bring to the boil, then reduce the heat and simmer for 15-20 minutes, stirring occasionally until the vegetables are tender. Remove from the heat and leave to cool for about 10 minutes
  2. Puree with a stick blender (or a different type of blender) until smooth. Add the curry powder, milk, cream then blend until well combined. Slowly reheat and take it off the heat before it starts to boil Garnish with parley on top
