Slow Cooked Beef Casserole with Vegetables and Kale
This slow cooked one pot wonder makes the beef easier to digest and can be changed to use kangaroo meat for extra iron
Print Recipe Slow Cooked Beef Casserole with Vegetables and Kale
Add the beef and olive oil to the slow cooker and sweet potato if using it.
Add the onions, carrots, celeriac, swede and garlic to the slow cooker.
Add water. Approximately 2 inch depth, don’t fill the pot to the brim.
Set the slow cooker to auto and leave to cook for 6 hours.
Just before ready to eat place the fresh kale on top of the cooked veg, place the lid back on and let it lightly steam for 5 to 10 minutes. Serve
