Heat oil in a large skillet over medium heat. Add garlic and cook for 1-2 minutes or until fragrant.
Add chicken and cook for 5 minutes on each side.
Add vegetables, lemon slices and capers and cook for another 5 minutes. Be careful not to overcook your vegetables, they should be tender, but still crisp.
Serve and garnish with parsley
