Process the nuts and seeds in a food processor, no need to have a fancy machine, you can pick up a small one for under $15 from Woolworths and just do it in batches. Add the chopped dates and rice syrup until well combined and mixture forms a thick paste-like consistency.
Roll 2 level teaspoons of mixture into balls. Roll in remaining sesame seeds to coat. Place balls on a plate. Refrigerate for 30 minutes or until firm
