Minced Beef in Lettuce Cups
Also known as San Choy Bao, a Chinese dish, is easy to make for lunch as well as dinner. Zesty ginger sauce wrapped in lettuce, they’re wonderfully fresh and light. Skipping the carrot, corn and sweet sauce keeps these variety low in carbs

Ingredients
- 2 tsp sesame oil
- 300g beef mince
- 1 cm piece ginger fresh, minced
- 1/2 juice lime
- 1 Tbsp tamari
- 1 cloves garlic minced
- 1 stick celery grated
- 1 cup bean sprouts
- 1 spring onion thinly sliced
- 1.5 heads cos lettuce mini, stem ends trimmed
- 1/4 bunch coriander roughly chopped

Instructions
- Heat a large frying pan over medium high heat. Add half the sesame oil and brown the beef for 3-4 minutes, stirring to break up any large chunks. Remove the beef from the pan and set it aside whilst you brown the other half
- Return the pan to the heat and add remaining oil. Add the garlic, ginger, lime, tamari, celery, spring onions and bean sprouts.
- Fill the lettuce leaves with the beef mixture and garnish with the coriander. Serve immediately
