Low Carb Macadamia Crusted Barramundi

A quick and easy fish recipe high in Omega 3 which uses a crusted nuts coating instead of bread crumbs to make it low carb and Paleo which is sure to impress your guests. Pair with roasted greens or a fresh green salad

I’ve used barramundi fish fillets, but you could also use

  • Salmon
  • Tuna
  • Sea bass
  • Halibut
  • Snapper

Instructions
  1. Preheat oven to 180°C
  2. Add macadamia nuts, parsley, garlic, pepper and orange zest to a mixing bowl and combine.
  3. In a small bowl, add the whisked egg and place adjacent to the macadamia mixture.
  4. Dip each fillet in egg mixture, coating on both sides. Then, press into nut mixture. Ensure each fillet is thoroughly coated.
  5. Place fillets on rack of foil lined baking pan and bake for 15 minutes, or until fish flakes apart with a fork.
