Hard-boiled Eggs with Spinach and Tomato

Eggs for breakfast doesn’t have to be a big cook up, put these eggs on to boil whilst  you jump into the shower, pack them all into a container and you’re out the door in the morning

Hard-boiled Eggs with Spinach and Tomato

Instructions
  1. Tear spinach into bite sized pieces and arrange on a plate.  Cut tomatoes into wedges and arrange on top of spinach.
  2. Place eggs in the bottom of a pot, and fill the pot with water that covers two inches above the eggs. Bring to the boil
  3. Once it boils, take off the heat and place a lid on it, let them sit for 10 minutes.
  4. Place the eggs in a small bowl and place in the sink then run cold water over the eggs (he steam it creates inside the shell makes it easier to remove the shell). Crack the shells open and roll on the bench to break the entire shell coating off, rinse after peeling. Slice into wedges and serve on the spinach and tomato. Drizzle olive oil over everything and serve
