Hard-boiled Eggs with Spinach and Tomato
Eggs for breakfast doesn’t have to be a big cook up, put these eggs on to boil whilst you jump into the shower, pack them all into a container and you’re out the door in the morning

Tear spinach into bite sized pieces and arrange on a plate. Cut tomatoes into wedges and arrange on top of spinach.
Place eggs in the bottom of a pot, and fill the pot with water that covers two inches above the eggs. Bring to the boil
Once it boils, take off the heat and place a lid on it, let them sit for 10 minutes.

Drizzle olive oil over everything and serve
