Optional: this recipe can be altered to include other green vegetables such as broccoli, rocket, watercress, parsley, silver-beet, spring onions, basil, or swap the lemon juice for lime and add some coriander

  1. Heat the coconut oil in a soup pot, add the onion, garlic, zucchini, fennel and celery stalks and cook for 5 minutes over low heat.
  2. Add the vegetable stock/bone broth, bring to boil and simmer over low heat for 5-7 minutes. Add the green peas, kale leaves and spinach, and remove from the heat.
  3. Transfer into the blender, add lemon juice and process to obtain a smooth cream. Add more vegetable stock to adjust the texture. Serve warm
