Chicken Avocado Salad

If you thought salads are boring, give this chicken & avocado salad a go. The avocados give it a smooth dressing whilst the fresh herbs give it pizzaz all with roast chicken that can even be pre-purchased (preferably organic)

Ingredients
  • 2 Tbsp dill sprigs, fresh, chopped
  • 2 cloves garlic crushed
  • 1 chicken roast , deboned and shredded (skin on or off)
  • 1 cucumber large , halved lengthwise and sliced
  • 4-5 tomato roma, sliced or chopped
  • 1/4 onion red, thinly sliced
  • 2 avocado peeled, pitted and diced
  • 1/2 cup parsley fresh flat-leaf, chopped

Instructions
  1. Mix together shredded chicken, cucumbers, tomatoes, onion, avocados, and chopped parsley in a large salad bowl.
  2. Drizzle with the olive oil and lemon juice (or lime juice). Toss gently to mix all of the flavours through
