  1. Preheat oven to 200 degress
  2. After dicing the capsicums, spring onions and tomatoes, put them in a large mixing bowl. Add the spinach and mix these all through
  3. Add the beaten eggs
  4. Lightly spray a muffin tin with oil and pour the egg mixture evenly into the muffin slots, sprinkle the feta on top
  5. Bake for 15-18 minutes or until the tops feel firm and set through
