  1. Preheat oven to 180 degrees Heat the olive oil in a pan and fry the bacon/ham for 2 minutes than add the capsicum and mushrooms. Fry for 3 minutes whilst stirring, take off heat
  2. Whisk the eggs in a jug, then add the cream and combine through. Add the mozzarella, parmesan, basil and parsley and stir through
  3. Spray a baking dish with the olive oil, line it with some baking paper then spray the paper well. Spread out the fried vegetables and ham mixture and top with the chopped spinach. Pour the egg and cheese mixture over this
  4. Bake in the oven for about 20 minutes or until cooked well through. Make sure the middle is set
  5. Leave to cool for 5 minutes in the pan before taking it out, slicing it up and serving with rocket
