Garlic & Rosemary Crusted Salmon
Juicy salmon with rosemary, lemon and garlic, takes minutes to prepare which is perfect for those short on time. Pair with steamed asparagus and cauliflower or a mixed green salad.

- 2 filets salmon (150g) with or without skin
Preheat oven at 180 degrees
Place salmon on a piece of foil and turn the edges up a little to make a bowl, Combine olive oil, lemon juice, rosemary, garlic & pepper and pour over fish, Reserve 2 tablespoons (mostly liquid) of your olive oil mixture to dress your salmon after plating.
Bake until fish is opaque in the centre, approx 15-20 minutes
After plating, pour the remaining dressing over the top of the salmon filet. Garnish with a fresh sprig of rosemary.
Serve with steamed asparagus and cauliflower or a mixed green salad.
